I made this type of Kimchi after my customers asked me for Organic Kimchi, or Kimchi without garlic, or only Kimchi juice as they want to take as a tonic for their gut health.
We have this type of Kimchi in Korea, and we call it MUL (Water) Kimchi. But to make it more interesting and easy to remember, I asked my customers what sort of name is right for this type of Kimchi, and one of my customers gave KIMBUCHA which I loved instantly! You can enjoy fermented vegetables as you normally do, and drink the fermented liquid like you drink Kombucha.Â
I made this using organic vegetables I purchased from a small organic farmer I met at the Grey Lynn Farmers market, so can assure you this is made using fresh & healthy vegetables.
